I’ve only worked a 9-to-5 once in my life, as a temp. It wasn’t for me. Mostly I’ve been teaching and waiting tables, a little bartending as well. Since my kids entered school, being home at the same time they are has become my highest priority when choosing a job, and yeah, I sacrifice a little income potential and even work longer hours to make that happen, but there’s no substitute for the time I spend with them; that’s my highest good. And they would rather have time with me than more stuff.

What I’m saying is, you gotta do what works for you. There’s always more money to make but time runs out. I’d rather take my kids to the food bank together than pay for groceries without them, y’know? Even better is using that time to volunteer together at the food bank, so they see the importance of taking care of others; and also see that selling labor for cash and spending the cash isn’t the only way to get what you need.

To eat: Pistachio ravioli — Not only is it the best savory dish on the menu, it’s vegetarian and cheese-free. I also like to sell this, as it generates positive reviews and repeat business, since we’re the only place in town that sells anything like it.

To sell: Avocado toast with house-cured salmon gravlax — I like to eat this, too, albeit vegan for myself; but the quick pickup time, bright color contrast, and great flavor make it one that people remember positively, and seeing it on a nearby table often makes other patrons ask “what is that and can I have it?” It’s also a good utility item because the kitchen can make it all day, so it’s a breakfast-y option for those who missed the breakfast menu cutoff. And of course, with the optional salmon add-on it’s the most high-dollar item at breakfast, driving sales and percentage-based tipping.
